The Red Mill Original bottling is our ode to the history of both Red Mill and Sydney Harbour as a Rum capital.

Red Mill was originally distilled and aged in the CSR refinery on the foreshore of Sydney Harbour, in Pyrmont Bay. A classic style of rum, it was rich and flavoursome, aged in all ex-whiskey casks. When ready, it would be being transported to George Fesq’s warehouse for bottling.

We haven’t attempt to recreate this Rum, but have used it as a reference for the ongoing journey of Red Mill. This has the stronger, punchier flavours of bourbon cask Rums, but with the refinement and elegance of all of the Red Mill spirits.

This first bottling was blended from 75% ex-Bourbon and 25% ex-Scotch wholly barrels, before resting for three months in a 1000L French oak foudre.

The label and package are a modern interpretation of the bottles that existed in the 1960s, with a tall, round bottle and gold square label.

We bottle this blend in both and Under-Proof and Over-Proof strength.
