The Red Mill Original bottling is our ode to the history of both Red Mill and Sydney Harbour as a rum capital.

Red Mill was originally distilled and aged in the CSR refinery on the foreshore of Sydney Harbour, in Pyrmont Bay. A classic style of rum, it was rich and flavoursome, aged in all ex-whiskey casks. When ready, it would be being transported to George Fesq’s warehouse for bottling.

We haven’t attempt to recreate this Rum, but have used it as a reference for the ongoing journey of Red Mill. This has stronger, punchier, vanillan flavours from the ex-bourbon casks, but with the refinement and elegance of all of the Red Mill spirits.

We batch blend this bottling from ~75% ex-Bourbon and ~25% ex-Scotch Whisky barrels, before resting for three months in a 1000L French oak foudre.

The label and package are a modern interpretation of the bottles that existed in the 1960s, with a tall, round bottle and gold square label.

We bottle this blend in both and Under-Proof and Over-Proof strength.
