It’s no mistake that you think of the sea when you think of rum. During the age of discovery and the maritime feats of lore, rum was the common denominator for hundreds of years. It was held in barrels below decks during the great battles, discoveries, and voyages of centuries past.
When we imagine the wide-open sea, rum is the drink that comes to mind.
When the British Navy offered a daily ration of liquor in return for the dangerous grind of life at sea, it was rum that was chosen. Not because it was a particularly British beverage, but because it was what the sailors were already used to.
The history of maritime trade makes cities like Boston, Liverpool, Amsterdam and Sydney great and historic rum cities.
Red Mill is a proud part of the long maritime history of Rum. A history born in the age of discovery, where the world was shaped and made at sea, so often with Rum barrels in the ship’s hold.
While many Rums are born in the regions where sugarcane is grown, many also descend from the merchants and entrepreneurs that lived in harbour cities across the world, where trading in barrels, blending casks in dockside warehouses, rebottling and creating things new again became part of Rum’s DNA. As it was for Red Mill on Sydney Harbour 90 years ago, as it still is to this day.
Sydney, Boston, Liverpool, and Amsterdam are all harbour cities with great Rum histories of their own.
For us, this lineage; the docks, wharves, ships and merchants, mean we spend a lot of our energies on barrels and blending. We source and use casks from around the world to age our Rums on Sydney Harbour, taking time to blend the unique flavour profiles they bring to our distillations.
